Refried beans is a dish of cooked and mashed pinto beans that is a traditional part of Mexican and Tex-Mex cuisine. Refried beans are also very popular in many other Latin American countries. Refried beans are made by soaking pinto beans for 8 hours and then cooking them in water, usually with onion, until soft. Then, they are mashed and fried with lard or other fats until almost dry. The beans are not called refried because they are fried twice; they actually get their name from the Spanish name for the dish – frijoles refritos. And – the word “refritos” translates to “well-fried.”

Refried beans are not keto. They are high in carbs, with one cup containing around 35g net carbs. The ideal carb range on keto is around 25-50g per day, so these should be avoided or consumed minimally on the keto diet. Are Any Beans Keto Approved?

Since beans tend to be starchy and high in carbohydrates, most beans are not considered keto-friendly. The beans with the highest amount of net carbs include black beans, kidney beans, chickpeas, pinto beans, and black-eyed peas. 

Thankfully, there are a couple of beans that do fit into the keto criteria. For instance, green beans are just 3g of net carbs per ½ cup serving, and black soybeans contain only 5g of net carbs per ½ cup serving.

Ingredients:

  • 800 ml black soybeans, rinsed well
  • 2 Tbsp Avocado Oil
  • 2 Cloves Garlic
  • 1 Jalapeno
  • 2 tsp Cumin
  • 1 Tbsp Chili Powder
  • 1 tsp Sea Salt
  • 2 limes, juiced
  • 4 cups water

Stovetop Instructions:

  1. Mince garlic and dice up a jalapeño. (Make sure to use gloves when dicing the jalapeno, to avoid the jalapeno juice burn!)
  2. Heat oil in a saucepan on medium heat and once hot, add cumin powder, chili powder, minced garlic, diced jalapeño, and a little sea salt. Cook for a minute or two until the spices are fragrant.
  3. Stir in rinsed black soybeans, then pour in the juice from both limes and enough water to just cover the beans (about 2 cups). Bring to a boil, reduce the heat to medium/low and simmer for 45 minutes, adding more water throughout the cooking process so that the beans are just covered. You’ll need about 4 cups of water in total.
  4. Once cooked, use a blender to puree until smooth, or cool completely and then puree in a blender.
