Classic Hollandaise Sauce Recipe

Ingredients:

  • ½ cup butter
  • 2 large egg yolks
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon salt
  • A dash of cayenne pepper

Instructions:

  1. Melt the butter in a saucepan until it is hot and foaming, but do not let it brown. Keep warm.
  2. Place a medium saucepan with about an inch of hot water over low heat and bring it to a simmer
  3. In a stainless-steel bowl, vigorously whisk the egg yolks with the lemon juice until the mixture is thickened.
  4. Place the bowl over the simmering water and continue to whisk.
  5. Drizzle the warm melted butter into the egg yolk mixture in a slow, steady stream while still whisking. Continue to whisk until the sauce has thickened. Make sure the sauce doesn’t get too hot. If the sauce starts to curdle, try whisking in a small amount of boiling water a half-teaspoon at a time.
  6. Remove the sauce from the heat and whisk in the salt and cayenne pepper or hot pepper sauce.
  7. The sauce is best served immediately. If the sauce needs to be held, place the bowl in a pan with hot water. Keep it on very low heat. If the sauce becomes too thick while sitting, whisk in a small amount of hot water to thin it.
  8. Too store leftover hollandaise sauce, keep in the refrigerator and reheat over very low heat. Whisk in small amounts of hot water, as needed to get the right consistency.

Notes: The sauce can be flavored with cilantro, lime, sriracha, chipotle, habanero, wasabi, smoked paprika, green chilis, green curry, or any number of other spices that complement the main dish over which the sauce is poured.
