Is Evaporated Milk Gluten Free? (Yes, Here’s Why)

Is Evaporated Milk Gluten Free

Evaporated milk is a canned, shelf-stable, highly concentrated milk. It is usually made from 2% or skim milk from cows. This type of milk is often used in super sweet recipes, such as pumpkin pie or tres leches cake. Evaporated milk is actually quite versatile and can also be used to thicken and sweeten coffee, give body to smoothies, and increase richness in creamy soups. With many baking recipes calling for evaporated milk, is it safe for gluten-free followers?

Yes, evaporated milk is gluten-free. The gluten from the animal feed is broken down by the cow’s digestive system and is not transferred to the final milk product. If you are looking for other alternatives, the best gluten-free alternatives to evaporated milk are Horizon Organic Skim Milk, MALK Almond Milk, and Iberia Canned Evaporated Coconut Milk.

Throughout this article, we will discuss the nutritional information for popular brands of condensed milk and alternative milk options. Let’s dig in!

How is Evaporated Milk Made?

To make evaporated milk, about 60 percent of the water is evaporated from cow’s milk, after which the liquid is canned, stabilized, and heat-sterilized at 245 F. The result of this high heat process leaves the milk with a slightly caramelized flavor, also known as the Maillard reaction.

This high heat process makes the milk shelf-stable for months, sometimes even years. The exact shelf life of canned, evaporated milk depends upon its added content and proportion of fat. It also ends up being a bit darker than fresh milk. Technically, when mixed with 1 ½ parts water, one part of evaporated milk can be reconstituted into the proportional equivalent of regular milk.

Is Evaporated Milk Healthy?

Since evaporated milk is highly concentrated, it has a higher nutrient concentration than fresh cow’s milk, thus resulting in more calories. Evaporated milk will generally have twice as many grams of carbs, protein, and fat – except for the reduced-fat or fat-free varieties. However, since the product is so concentrated, that means it also has higher vitamin and minerals concentrations. For instance, evaporated milk has over 50% of the daily value (DV) for calcium, 15% of the DV for magnesium, and 18% of the DV for zinc. This is compared to fresh milk, which contains 21%, 6%, and 8%, respectively.

Evaporated Milk vs. Condensed Milk

When looking through the grocery aisle, we see both canned evaporated milk and canned condensed milk. These products look almost identical, but they are very different. The biggest difference between the two is that condensed milk has much more added sugar, making it abundantly sweeter. Condensed milk is commonly found in desserts, such as ice cream, pudding, and pies.
